  • 1 ½ cups graham cracker crumbs
  • ¾ cup granulated sugar (divided)
  • ½ cup unsalted butter (melted, divided)
  • 16 oz cream cheese (softened)
  • 3 large eggs
  • 3 cups apples (peeled and sliced)
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • 1 cup oats
  • ½ cup all-purpose flour

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs, ¼ cup granulated sugar, and ¼ cup melted butter in a bowl. Press into the bottom of a springform pan and bake for 10 minutes.
  2. Beat cream cheese and remaining sugar until smooth. Add vanilla and eggs one at a time, mixing well.
  3. In another bowl, toss sliced apples with brown sugar, cinnamon, and nutmeg.
  4. Pour half the cheesecake mixture over the crust, layer apples on top, then add the remaining cheesecake mixture.
  5. Combine oats, brown sugar, flour, and remaining melted butter for the topping. Sprinkle over cheesecake.
  6. Bake for about one hour or until edges are set but center is slightly jiggly. Cool completely before chilling in the refrigerator for at least four hours.
