  • For the streusel: ½ cup all-purpose flour
  • â…“ cup packed brown sugar
  • ¼ cup old-fashioned oats
  • ¼ cup cold unsalted butter (cubed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Prepare the streusel by mixing flour, brown sugar, oats, cinnamon, and salt; cut in cold butter until crumbly. Chill.
  3. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Beat softened butter and sugar until fluffy; add eggs one at a time and mix in vanilla.
  5. Alternate adding dry ingredients with milk until just combined; fold in diced apples.
  6. Fill muffin cups two-thirds full with batter; sprinkle with chilled streusel.
  7. Bake for 22-25 minutes or until a toothpick comes out clean.
