  • 8 oz cream cheese (softened for frosting)
  • ÂĽ cup unsalted butter (softened for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Prepare the streusel by mixing flour, brown sugar, oats, cinnamon, salt, and cold butter until crumbly; refrigerate.
  3. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Cream softened butter and granulated sugar until fluffy; add eggs one at a time followed by vanilla extract.
  5. Gradually mix wet ingredients with dry ingredients alternating with milk until just combined.
  6. Fold in diced apples gently.
  7. Fill muffin cups two-thirds full and top with streusel; bake for 22-25 minutes until golden.
  8. Cool before frosting with cinnamon cream cheese mixture.
