  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled and sliced)
  • 50 g brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs
  • 55 g unsalted butter (melted)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats

Instructions

  1. Prepare the crust by crushing biscoff cookies and mixing them with melted butter. Press into the bottom of a springform pan.
  2. For the apple filling, toss sliced apples with brown sugar, cinnamon, and cornstarch. Layer over the crust.
  3. Blend cream cheese and granulated sugar until smooth. Mix in Greek yogurt, vanilla extract, spices, and eggs one at a time. Pour over the apple layer.
  4. Make the streusel topping by mixing melted butter with flour, brown sugar, and rolled oats until crumbly. Sprinkle on top of the cheesecake filling.
  5. Bake in a preheated oven until set but still slightly jiggly in the center. Allow to cool completely before chilling in the fridge for several hours.
