  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground allspice
  • 1/8 tsp. ground cloves
  • 2/3 cup vegetable oil
  • 2 large eggs, room temperature
  • 3/4 cup brown sugar, packed (light or dark)
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream, room temperature
  • 1 tsp. pure vanilla extract
  • 23 large honey crispy apples, grated using the large holes on a box grater (~1 1/2 cups; can keep the skin on)
  • 1/4 cup salted butter
  • 1/2 cup dark brown sugar, packed
  • 2 Tbsp. heavy cream
  • 1/2 tsp. pure vanilla extract
  • 1 cup powdered sugar, sifted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch nonstick pan with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, salt, and spices until evenly combined.
  3. In another bowl, mix the vegetable oil, eggs, sugars, sour cream, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients by folding gently until just mixed; avoid overmixing.
  5. Fold in the grated apples for added moisture and sweetness.
  6. Pour the batter into the prepared pan and bake for 35–40 minutes or until a toothpick inserted comes out clean.
  7. While cooling slightly, prepare the brown sugar icing by melting butter with brown sugar and cream; whisk in vanilla and powdered sugar until smooth.
  8. Drizzle the icing over the warm cake before serving.
