  • 34 lbs. organic chicken, skin removed
  • 23 Tbsps Jamaican Green Seasoning
  • 2 Tbsps Jamaican curry powder
  • 1 (14 oz.) can full-fat coconut milk
  • 2 medium russet potatoes, peeled and cubed
  • 2 medium carrots, peeled and chopped
  • 1 medium bell pepper, chopped
  • 3 garlic cloves, minced
  • 1 cup organic chicken stock, low-sodium
  • Scotch bonnet or habanero peppers to taste

Instructions

  1. Marinate chicken with Jamaican Green Seasoning and curry powder for at least 15 minutes.
  2. Chop veggies while the chicken marinates.
  3. Heat olive oil in a large pot; brown marinated chicken on all sides.
  4. Remove chicken; sauté garlic and ginger until fragrant. Return chicken to the pot.
  5. Add coconut milk, potatoes, carrots, bell pepper, and seasonings; stir well.
  6. Simmer covered for about 30 minutes until everything is tender. Adjust seasoning if necessary before serving.
