  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked turkey sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 200°C. Toss butternut squash cubes with olive oil, salt, and pepper; spread on a baking sheet and roast for 15-20 minutes until tender.
  2. On another baking sheet, toss Brussels sprouts with olive oil, salt, and pepper; roast alongside the squash for 20-30 minutes until golden.
  3. Cook bow tie pasta according to package instructions; reserve some pasta water before draining.
  4. In a skillet over medium heat, cook sliced turkey sausage until browned; remove from skillet.
  5. Sauté minced garlic in the same skillet for about 30 seconds. Add butter and drained pasta along with reserved pasta water; season with salt, pepper, and smoked paprika.
  6. Gently mix in roasted butternut squash, Brussels sprouts, cooked sausage, and fresh thyme.
