  • 2 cups milk

  • ½ teaspoon dried thyme
  • ¼ teaspoon garlic powder
  • 1 teaspoon hot sauce
  • 1 cup gruyere cheese, shredded
  • 2 cups cheddar cheese, shredded
  • ¼ cup Parmesan cheese, shredded
  • 2 large yellow onions
  • 2 Tablespoons olive oil

Instructions

  1. Slice onions into even ¼-inch slices and caramelize them in a skillet with butter and olive oil over medium heat for about 40-50 minutes.
  2. Cook the bacon in a separate skillet over low heat until crispy; reserve drippings.
  3. Boil salted water and cook pasta shells until al dente.
  4. In the reserved drippings, whisk flour over medium heat until golden brown; gradually add heavy cream and milk while stirring to maintain smoothness.
  5. Stir in mustard powder, thyme, garlic powder, and hot sauce; bring to a gentle boil.
  6. Reduce heat and slowly add gruyere, cheddar, and Parmesan cheese until melted; fold in caramelized onions and drained pasta shells.
  7. Sprinkle crispy bacon on top before serving.
