  • 5 cups butternut squash (cubed)
  • 1/2 cup olive oil
  • 1 block (8 oz) feta cheese
  • 1 lb pasta (rotini, orzo, or ditalini)
  • 10 leaves fresh sage (minced)
  • 3 cloves garlic (finely minced)
  • Salt and pepper to taste
  • Optional: red pepper flakes, hot honey

Instructions

  1. Preheat the oven to 400°F.
  2. Toss cubed butternut squash with olive oil, salt, and pepper. Place the feta block in the center and drizzle with more olive oil and optional red pepper flakes.
  3. Bake for about 30 minutes until golden brown; increase heat to 450°F for an additional 5–10 minutes.
  4. Meanwhile, cook pasta according to package instructions until al dente; reserve two cups of pasta water before draining.
  5. Once baked, mix in minced garlic, sage, honey, and cooked pasta along with one cup of reserved water. Stir until well combined.
  6. Adjust consistency with remaining pasta water if needed; season as desired.
