  • 1/2 cup Olive Oil
  • 2 hefty pinches Kosher Salt
  • 1 hefty pinch Red pepper Flakes (optional)
  • 1 8 oz block Feta Cheese
  • 1 lb Pasta (such as rotini, orzo, or ditalini)
  • 10 leaves Fresh Sage (minced)
  • 3 cloves Garlic (finely minced)
  • 1 tbsp Hot Honey
  • Fresh Cracked Black Pepper

Instructions

  1. Preheat your oven to 400°F.
  2. Toss butternut squash cubes with olive oil, salt, and black pepper in a baking dish. Add feta cheese in the center, drizzle with olive oil, and sprinkle red pepper flakes if desired. Bake for 30 minutes.
  3. Increase the oven temperature to 450°F, shake the dish gently (keeping feta intact), and bake for an additional 5-10 minutes until feta is golden brown.
  4. Cook pasta in salted boiling water until al dente; reserve 2 cups of pasta water before draining.
  5. Stir minced garlic, chopped sage, and honey into the roasted vegetables immediately after removing from the oven. Combine with drained pasta, adding reserved pasta water gradually until creamy.
  6. Season to taste with salt and pepper.
