  • 2 large chicken breasts
  • 4 ounces cream cheese
  • 3/4 cup heavy cream
  • 8 ounces sun-dried tomatoes
  • 3/4 cup fresh spinach
  • 1/4 cup Parmesan cheese
  • 3/4 cup mozzarella cheese
  • 4 cloves garlic (finely minced)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Kosher salt (to taste)
  • Freshly ground black pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. Slice chicken breasts in half to create four fillets and season with salt and pepper.
  3. In a bowl, blend softened cream cheese and heavy cream until smooth; mix in garlic, onion powder, paprika, Italian seasoning, salt, pepper, Parmesan cheese, and half of the mozzarella.
  4. Spread the mixture over the chicken in a baking dish; add chopped sun-dried tomatoes.
  5. Cover with foil and bake for 20 minutes or until chicken reaches 165°F (74°C).
  6. Stir in spinach and top with remaining mozzarella; bake uncovered for an additional 10 minutes until cheese is melted.
