  • 2 large chicken breasts
  • 4 ounces cream cheese
  • 3/4 cup heavy cream
  • 8 ounces sun-dried tomatoes
  • 3/4 cup fresh spinach
  • 1/4 cup Parmesan cheese
  • 3/4 cup mozzarella cheese
  • 4 cloves garlic
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Slice chicken breasts in half horizontally to create thin fillets. Arrange them in a baking dish and season with salt and pepper.
  3. In a medium bowl, mix cream cheese with heavy cream until smooth. Stir in minced garlic, onion powder, paprika, Italian seasoning, salt, pepper, Parmesan cheese, and half of the mozzarella.
  4. Spread the cream mixture over the chicken fillets and drizzle with reserved sun-dried tomato oil. Top with chopped sun-dried tomatoes.
  5. Cover with aluminum foil and bake for 20 minutes.
  6. Uncover and stir in chopped spinach; sprinkle remaining mozzarella on top.
  7. Bake uncovered for another 10 minutes until cheese is melted and golden.
