  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 2/3 cup mashed ripe banana (about 2 medium bananas)
  • 1/2 cup sour cream
  • 2 cups all-purpose flour
  • 3/4 cup graham cracker crumbs
  • 1 cup miniature chocolate chips, divided
  • 1 cup miniature vegan marshmallows, divided
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 1 teaspoon cinnamon
  • 2/3 cup whole milk

Instructions

  1. Preheat oven to 400°F. Line a muffin pan with cupcake liners.
  2. In a large bowl, combine melted butter and brown sugar until smooth. Add egg, vanilla extract, mashed banana, and sour cream; mix well.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
  4. Gradually add the dry mixture to the wet ingredients alternately with milk until just combined.
  5. Fold in 3/4 cup of chocolate chips and vegan marshmallows gently.
  6. Fill muffin liners two-thirds full; sprinkle remaining chocolate chips and marshmallows on top.
  7. Bake for about 16 minutes or until golden brown and a toothpick comes out clean.
