  • 4 cloves garlic, minced
  • 3 cups low-sodium beef broth
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 3 tbsp butter

Instructions

  1. In a large skillet over medium heat, melt 1 tablespoon of butter and sauté the diced onion for about 3-4 minutes until softened.
  2. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add uncooked rice, beef broth, Italian seasoning, salt, and pepper to the skillet; stir well.
  5. Bring to a boil then reduce heat to low; cover and simmer for 18-20 minutes until rice is tender.
  6. In a separate saucepan, melt remaining butter over low heat; stir in milk and cheeses until smooth.
  7. Combine cheese sauce with the beef and rice mixture; cook uncovered for a few more minutes.
  8. Serve warm with optional garnishes like fresh parsley.
