  • 1/3 cup buttermilk (mix 1/3 cup whole milk + 1 tsp vinegar)
  • 1 cup sour cream, ideally room temp
  • 3/4 cup cocoa powder, Dutch Processed preferred
  • 2 tsp instant coffee
  • 3/4 cup boiling water
  • 300g dark chocolate
  • 3 tbsp corn syrup
  • 8 oz cream cheese, room temperature
  • 1/3 cup cocoa powder
  • 1 cup powdered sugar
  • 1/4 tsp salt
  • 1 1/4 cup heavy cream, chilled

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, baking powder, baking soda, sugars, and salt.
  3. In another bowl, combine eggs, vegetable oil, buttermilk mixture, sour cream, cocoa powder, instant coffee, and boiling water.
  4. Mix wet and dry ingredients until smooth. Pour into greased round cake pans.
  5. Bake for 30 minutes or until a toothpick comes out clean. Cool completely.
  6. For frosting: Melt dark chocolate; mix in corn syrup. Beat cream cheese; add cocoa powder and powdered sugar gradually before mixing in heavy cream until smooth.
  7. Assemble by layering the cake with fudge frosting.
