  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 5 tablespoons all-purpose flour

  • 1 & 1/2 teaspoons cinnamon
  • Juice from half a lemon (2 tablespoons)
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 425°F (220°C) and prepare an empty baking sheet on the center rack.
  2. In a skillet, mix sliced apples with sugars, flour, salt, cinnamon, and lemon juice; cook over medium heat for about 20 minutes until tender but not mushy.
  3. Remove from heat and stir in vanilla; cool completely.
  4. Roll out one pie crust into a deep dish, fill with cooled apple mixture, then cover with second crust. Vent the top.
  5. Chill assembled pie for 20–30 minutes before brushing with milk or beaten egg and sprinkling raw sugar on top.
