  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Season chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat. Cook chicken for 5-7 minutes per side until golden brown and cooked through. Let rest before slicing.
  4. In a bowl, combine diced tomatoes, garlic, basil, balsamic vinegar, olive oil, salt; toss well.
  5. Toss cooked pasta with any leftover drippings from the chicken skillet. Slice chicken and top the pasta with bruschetta mixture.
  6. Serve warm with grated Parmesan cheese and basil leaves.
