  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 oz.) packages cream cheese, softened
  • 1/2 cup sour cream
  • 3 large eggs
  • 2 cups granulated sugar
  • 1/2 tablespoon vanilla extract
  • 1/2 tablespoon butter flavoring
  • 1/2 cup butterscotch sauce
  • 8 oz. tub of cool whip

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl. Press this mixture into the bottom of an 8-inch springform pan.
  3. In another bowl, beat the cream cheese until smooth. Add sour cream and gradually mix in sugar until well combined.
  4. Beat in eggs one at a time, then stir in vanilla extract and butter flavoring until smooth.
  5. Mix in butterscotch sauce and butterscotch chips until evenly incorporated.
  6. Pour the filling over the crust and smooth the top with a spatula.
  7. Bake for about 60 minutes or until edges are set; let cool gradually in the oven with the door ajar for an hour.
  8. Refrigerate for at least four hours or overnight before serving.
  9. Top with cool whip and drizzle with additional butterscotch sauce before serving.
