  • 2 gala apples, peeled, cored, and diced
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons brown sugar (or honey)
  • 2 tablespoons butter, chopped into sections
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup pecans (or walnuts)
  • 1/4 cup dried cranberries

Instructions

  1. Preheat your oven to 400°F.
  2. In a large bowl, mix cubed butternut squash, diced apples, cinnamon, brown sugar, and vanilla extract until well combined.
  3. Season with salt and black pepper, mixing again.
  4. Spread the mixture into a baking dish and dot with butter.
  5. Cover and bake for 15 minutes.
  6. After 15 minutes, add raisins and nuts; gently toss everything together.
  7. Cover again and bake an additional 15 minutes until tender.
