  • ½ cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon sea salt
  • 1 ½ cups sweetened coconut flakes

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a stand mixer, beat together softened butter, granulated sugar, and brown sugar until fluffy. Add vanilla and coconut extracts followed by eggs; mix well.
  3. In another bowl, whisk flour, baking soda, cream of tartar, and sea salt. Gradually add dry ingredients to the wet mixture until just combined.
  4. Fold in most of the sweetened coconut flakes (reserve some for topping).
  5. Scoop dough onto prepared sheets about 2 inches apart and sprinkle reserved coconut on top.
  6. Bake for 9-10 minutes until golden brown. Let cool on a rack.
