  • 3/4 cup light brown sugar
  • 1 egg
  • 1 tsp vanilla extract

  • 1/2 tsp salt
  • 1 cup sweetened shredded coconut (toasted optional)

Instructions

  1. Preheat your oven to 350°F (175°C).

  4. In another bowl, whisk together flour, baking soda, salt, and half of the shredded coconut.
  5. Gradually add the dry mixture to the wet ingredients until fully incorporated. If the dough is too dry, add one tablespoon of milk.
  6. Fold in the remaining shredded coconut by hand.
  7. Scoop portions of dough onto a prepared baking sheet and bake for 9-11 minutes until edges are set but centers remain soft.
