  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 tsp dried thyme or Italian seasoning
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil. Season chicken with salt, pepper, and dried thyme or Italian seasoning. Sear for about 5-6 minutes per side until golden brown.
  3. Remove chicken; sauté garlic for 1 minute, then add mushrooms until softened (about 5 minutes). Stir in spinach until wilted.
  4. Pour in heavy cream and chicken broth; simmer for 3-4 minutes until slightly thickened.
  5. Place chicken in a baking dish and cover with the creamy sauce. Top with cheeses.
  6. Bake for 15-20 minutes until cheese is bubbly and chicken is cooked through.
  7. Serve warm with optional parsley garnish.
