  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (10-ounce) package frozen spinach, thawed and squeezed dry
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1 lb penne pasta
  • Pinch of nutmeg (optional)

Instructions

  1. Cook penne pasta according to package instructions until al dente. Drain and reserve about 1/2 cup of the pasta water.
  2. In a large skillet over medium-high heat, heat olive oil. Season the chicken with salt and pepper; cook until browned and cooked through. Remove from skillet.
  3. In the same skillet, sauté onions until softened, about five minutes. Add garlic during the last minute.
  4. Stir in thawed spinach until heated through.
  5. Pour in chicken broth and heavy cream; bring to a simmer to thicken slightly. Stir in Parmesan cheese until creamy.
  6. Add cooked penne and chicken back into the skillet; toss gently to combine. Adjust sauce consistency with reserved pasta water if needed.
  7. Serve immediately with extra Parmesan on top.
