  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup whole milk
  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, ground cinnamon, and salt.
  3. In a large bowl, cream softened butter and granulated sugar until light and fluffy. Add eggs one at a time, followed by vanilla extract.
  4. Alternate adding dry ingredients and sour cream to the butter mixture until just combined.
  5. Prepare the cinnamon swirl by mixing brown sugar and cinnamon with melted butter.
  6. Fill each cupcake liner with batter, add the swirl mixture on top, and gently mix.
  7. Bake for 18-22 minutes or until a toothpick comes out clean.
  8. Allow cooling slightly before drizzling with glaze made from powdered sugar, milk, and vanilla.
