  • 1 tbsp ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a bowl, mix the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk melted butter, milk, eggs, nutmeg, and vanilla until smooth.
  4. Combine dry and wet ingredients gently until just mixed; do not overmix.
  5. Fill muffin cups two-thirds full with batter.
  6. Bake for 20–25 minutes or until a toothpick inserted comes out clean. Cool for five minutes before transferring to a wire rack.
