  • 3 1/2 lbs beef chuck, cut into 2-inch pieces
  • 2 cups bold apple vinegar
  • 2 cups beef stock
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 10 oz frozen pearl onions, defrosted and drained
  • 16 oz cremini mushrooms, quartered

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a Dutch oven over medium-low heat, cook the chopped bacon until brown; set aside.
  3. Season beef with salt and pepper; sear in the same pot until browned on all sides.
  4. Sauté onions and carrots in butter; add garlic, tomato paste, and flour until caramelized.
  5. Stir in apple vinegar and beef stock; return beef and bacon to pot with thyme and bay leaves. Cover and bake for about 2½ hours.
  6. In a skillet, brown mushrooms and pearl onions; add to the Dutch oven after two hours of cooking.
  7. Bake covered for another 45-60 minutes until tender.
