  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup old-fashioned oats
  • 1 cup corn flakes
  • 1 cup chopped toasted pecans
  • 1/2 cup coconut flakes
  • 6 oz peanut butter chips
  • 6 oz semi-sweet chocolate chips

Instructions

  1. Toast the pecans in a dry skillet over medium heat for 3–5 minutes until fragrant.
  2. In a large bowl, beat the softened butter until fluffy.
  3. Add white sugar, brown sugar, eggs, and vanilla; mix until well combined.
  4. Gradually add flour, salt, baking powder, and baking soda; mix gently.
  5. Fold in oats, corn flakes, toasted pecans, coconut flakes, peanut butter chips, and chocolate chips.
  6. Chill the dough in the refrigerator for at least one hour.
  7. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  8. Scoop dough onto prepared sheets leaving space between each cookie.
  9. Bake for 12–14 minutes until golden around the edges but slightly shiny in the center.
  10. Allow cookies to cool before enjoying.
