  • Pinch salt (optional)
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat your oven to 350°F and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the egg, pumpkin puree, sugars, coconut oil, sour cream, vanilla, and spices until well blended.
  3. Gently fold in the flour, baking powder, baking soda, and optional salt until just combined.
  4. Pour two-thirds of the batter into the prepared pan.
  5. In another bowl, mix cream cheese with sugar and flour until smooth; spread over the batter in the pan.
  6. Dollop the remaining pumpkin batter on top without disturbing the filling.
  7. Bake for about 48 minutes or until golden brown and a toothpick comes out clean or with moist crumbs.
  8. Cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.
