  • 11/2 lbs Little Potatoes Company White Creamer potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped fresh parsley

Instructions

  1. Poke each potato with a fork and microwave for 4 minutes until softened.
  2. Flip the potatoes over and microwave for an additional 4 minutes.
  3. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  4. Toss the potatoes in olive oil, salt, and pepper until well coated.
  5. Smash each potato to about 3/8" thick on the baking sheet.
  6. Bake for 6 minutes, flip, then bake for another 6 minutes until golden and crispy.
  7. Remove from the oven and sprinkle with parsley before serving.
