  • 2 lbs fresh tomatoes (Roma or vine-ripened), halved
  • 1 whole head of garlic
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • 2 cups vegetable or chicken broth
  • ½ cup heavy cream (or coconut milk)
  • ¼ cup fresh basil leaves
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange halved tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and place on the baking sheet.
  4. Roast for 30-35 minutes until tomatoes are caramelized and soft.
  5. In a pot over medium heat, sauté chopped onion in olive oil until soft.
  6. Squeeze roasted garlic cloves into the pot, add roasted tomatoes, broth, and basil.
  7. Blend until smooth using an immersion blender.
  8. Stir in heavy cream (or coconut milk), simmer for another 5-10 minutes.
  9. Serve warm with garnishes like basil leaves or crispy cherry tomatoes.
