  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a medium-sized baking dish.
  2. Slice the Yukon gold potatoes thinly (about 1/16th inch).
  3. In a pot over medium heat, melt butter and sauté minced garlic until fragrant. Stir in flour and cook for 1-2 minutes before gradually adding heavy cream; cook until thickened.
  4. Remove from heat, then stir in Parmesan cheese (if using), thyme, salt, and pepper.
  5. Combine sliced potatoes with the sauce in a large bowl, ensuring every slice is coated.
  6. Stack potato slices upright in the greased baking dish, pour leftover sauce on top, and sprinkle additional cheese if desired.
