  • 1 large sweet onion, peeled and chopped
  • 34 cloves garlic, minced
  • ¼ cup chopped cilantro
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 ½ pounds boneless chicken breast
  • 30 ounces canned cannellini beans, drained
  • 7 ounces chopped green chiles
  • 1 cup frozen corn
  • 4 cups chicken broth
  • 8 ounces cream cheese, cut into cubes

Instructions

  1. In a large pot over medium heat, melt butter. Sauté chopped onion until translucent. Add minced garlic, cumin, oregano, and cilantro; stir until fragrant.
  2. Add boneless chicken breasts and pour in chicken broth with drained cannellini beans and green chiles. Bring to a boil, then reduce to simmer.
  3. After about 20 minutes, shred cooked chicken using two forks and return it to the pot along with frozen corn and cream cheese cubes. Stir until creamy.
