  • 2 lbs potatoes, thinly sliced
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a round baking dish.
  2. In a bowl, whisk together the balsamic vinegar, olive oil, garlic, thyme, salt, and pepper.
  3. Layer half of the potato slices in the greased dish and drizzle with half of the balsamic mixture.
  4. Add the remaining potato slices and drizzle with the rest of the mixture.
  5. Cover with foil and bake for 45 minutes.
  6. Remove foil, sprinkle Parmesan cheese on top if desired, and bake uncovered for an additional 15-20 minutes until golden brown.
  7. Allow to cool slightly before slicing into wedges and serve warm.
