  • 4 small to medium chicken breasts (or 2 large halved)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 34 cloves garlic, minced
  • 1 cup light cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup grated parmesan cheese
  • 1 cup chopped spinach (optional)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken and cook for about 5-6 minutes per side until golden brown and crispy. Remove from skillet and set aside.
  3. Lower the heat and add minced garlic to the same pan, sautéing for about 30 seconds until fragrant.
  4. Pour in the light cream while stirring continuously. Add Italian seasoning and parmesan cheese, mixing until smooth.
  5. If using spinach, stir it in and simmer for another 2-3 minutes until wilted.
  6. Return the chicken to the pan, spooning the sauce over each piece. Let simmer together for one minute.
