  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cups flour
  • 5 tbsp butter (for filling)
  • 2/3 cup brown sugar
  • 1 & 1/4 cups chopped pecans
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, oil, granulated sugar, and powdered sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until well combined.
  4. Gradually incorporate the flour, salt, and baking powder until just combined.
  5. Scoop out equal-sized balls of dough onto a baking sheet, flattening each slightly. Create an indentation in the center for the filling.
  6. For the filling, melt the butter and mix with brown sugar, chopped pecans, heavy cream, vanilla extract, cinnamon, nutmeg, and salt; spoon this mixture into each cookie's indentation.
  7. Bake for about 8-9 minutes until edges are golden but centers remain soft.
