  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese, shredded
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt, plus more to taste
  • Freshly ground black pepper
  • ½ cup gruyere cheese
  • ¼ cup grated parmesan
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 2-quart square baking dish.
  2. Layer thinly sliced potatoes and onions in the prepared dish.
  3. In a saucepan over medium heat, melt butter, then whisk in flour gradually while adding almond milk until smooth.
