  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • ½ cup Gruyere cheese (or more sharp cheddar)
  • ¼ cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a 2-quart baking dish, then layer sliced potatoes and onions.
  3. In a saucepan, melt butter over medium heat. Whisk in flour, then gradually add almond milk until smooth. Simmer until creamy.
