  • 5 ½ oz white chocolate (finely chopped)
  • ¼ cup double cream
  • 3 ½ oz unsalted ground pistachios
  • Pinch of salt
  • 3 ½ oz kataifi pastry (chopped and separated)
  • 1 tbsp butter
  • 9 oz milk chocolate (finely chopped)
  • ¾ cup all-purpose flour
  • ⅔ cup cornstarch
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tbsp vegetable oil
  • 1 cup water

Instructions

  1. In a bowl, whisk together flour, cornstarch, sugar, and salt.
  2. Add vegetable oil and water; whisk until smooth and let rest for 30 minutes.
  3. Heat a nonstick pan and pipe thin strands of batter until set but not browned.
  4. Cool the cooked strands under towels.
  5. Melt white chocolate and double cream in microwave; blend with ground pistachios and salt.
  6. Melt butter in a pan; toast kataifi strands until golden; mix with pistachio cream.
  7. Chill mixture for an hour, then roll into balls.
  8. Dip each ball in melted milk chocolate; garnish with chopped pistachios.
  9. Refrigerate until set.
