  • 3 tbsp fresh lime juice
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 812 corn tortillas
  • ½ cup white onion (finely chopped)
  • ½ cup fresh cilantro (chopped)
  • Lime wedges for serving

Instructions

  1. In a large bowl, mix lime juice, olive oil, garlic, cumin, chili powder, salt, oregano, and black pepper. Add chicken thighs and coat well. Marinate in the fridge for at least 30 minutes.
  2. Preheat grill or stovetop pan over medium-high heat. Grill marinated chicken for about 6-7 minutes per side until fully cooked.
  3. Warm corn tortillas on the grill or in a skillet for about a minute on each side.
