  • 1 (14-16 pound) whole turkey
  • Salt & pepper (to taste)
  • 1 cup unsalted butter (softened)
  • 1 tablespoon fresh sage (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • 1 tablespoon fresh rosemary (chopped)
  • 4 cloves garlic (minced)
  • 1 lemon (halved)

Instructions

  1. Preheat your oven to 450°F and prepare a baking sheet.
  2. Take the turkey out of the fridge to reach room temperature, about an hour before roasting.
  3. In a bowl, mix softened butter with sage, thyme, rosemary, garlic, salt, and pepper.
  4. Pat the turkey dry and season generously inside and out with salt and pepper; stuff with lemon halves.
  5. Rub the herb butter all over the skin of the turkey.
  6. Place the turkey breast-side up on a rack in a roasting pan. Reduce oven temperature to 350°F and roast for about three hours or until a thermometer reads 165°F in the thickest part of the thigh.
  7. Let it rest for at least 20 minutes before carving.
