  • 2 whole oranges
  • ⅔ cup honey
  • 3 large eggs
  • ½ teaspoon baking soda
  • 1 cup ground pistachios
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey for glaze
  • ½ cup fresh orange juice for glaze

Instructions

  1. Rinse oranges, then simmer in water for 1 hour. Cool and blend until smooth.
  2. Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
  3. In a bowl, mix blended oranges with honey, eggs, almond flour, ground pistachios, baking soda, and vanilla until combined.
  4. Pour batter into the prepared pan and bake for about an hour or until a toothpick comes out clean.
  5. For the glaze, combine honey and orange juice in a pot; boil and reduce by half.
  6. Brush glaze over warm cake and let cool before removing from the pan.
