  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 6 slices of baguette or crusty bread (toasted)
  • 1 1/2 cups shredded Gruyère or Swiss cheese

Instructions

  1. Sear the beef short ribs in olive oil over medium-high heat until browned on all sides.
  2. In the same pot, melt unsalted butter and caramelize the onions until deep golden brown (about 30-40 minutes).
  3. Add minced garlic and cook for another minute. Then pour in beef broth, Worcestershire sauce, bay leaf, thyme, salt, and pepper.
  4. Return seared short ribs to the pot and simmer on low for about three hours.
