  • 1 large egg
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped parsley
  • 3 cloves garlic, minced
  • 12 oz linguine
  • ¾ cup heavy cream
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil (for searing)
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 1 tbsp lemon juice
  • Salt to taste
  • 1 tbsp butter
  • Pasta water (as needed for consistency)

Instructions

  1. In a large bowl, combine ground beef, egg, breadcrumbs, Parmesan cheese, parsley, minced garlic, salt, and black pepper. Mix gently and form into meatballs (20–24).
  2. Heat olive oil in a skillet over medium heat and sear meatballs until browned on all sides (6–8 minutes). Remove from skillet.
  3. In the same skillet, melt butter and add minced garlic and optional red pepper flakes; cook until fragrant. Stir in lemon juice and return meatballs to the skillet for simmering (5–7 minutes).
  4. Cook linguine according to package instructions; reserve pasta water.
  5. In another saucepan, melt butter and heavy cream over medium heat; stir in Parmesan until melted. Adjust consistency with reserved pasta water.
  6. Toss cooked linguine with the creamy sauce and serve topped with meatballs.
