  • 1.2kg Sweet Potatoes
  • 6 tbsp Unsalted Butter (melted)
  • 3 large cloves of Garlic (finely grated)
  • 1 tbsp Fresh Rosemary (finely diced)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 45g Parmesan cheese

Instructions

  1. Preheat your oven to 180C/350F.
  2. Peel sweet potatoes and slice into thin rounds (about 3mm thick). If necessary, shape them to fit in muffin tins.
  3. Brush muffin tin with melted butter. In a bowl, mix remaining butter with garlic, rosemary, salt, and pepper. Toss potato slices until well coated.
  4. Layer potato slices in muffin cups, stacking them high. Brush tops with any leftover butter mixture and cover with foil.
  5. Bake for 35 minutes, then remove foil and increase temperature to 200C/400F for an additional 15 minutes until lightly charred.
  6. Carefully scoop out stacks using a spoon, drizzle with remaining butter from the tin before serving.
