  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • ½ cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil

Instructions

  1. Wash and halve baby potatoes; mince garlic.
  2. Rub chicken breasts with olive oil, then season with Italian seasoning, salt, black pepper, and optional red pepper flakes.
  3. Layer halved potatoes in the bottom of the crockpot; place seasoned chicken on top.
  4. Pour chicken broth over everything.
  5. Sprinkle minced garlic and grated parmesan cheese on top.
  6. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken reaches an internal temperature of 165°F (75°C).
  7. Serve with any remaining sauce spooned over the dish.
