  • 1 large bulb of garlic
  • 1.3kg / 2.8lb baking potatoes
  • 75g (5 tbsp) butter (2 tbsp melted)
  • 2 tbsp heavy cream (at room temperature)
  • 60g (3/4 cup) freshly grated Parmesan cheese
  • 4 large egg yolks
  • Finely diced fresh parsley (for serving)
  • Olive oil (as needed)
  • Salt & pepper (to taste)

Instructions

  1. Roast the garlic by slicing off the top, drizzling with olive oil, wrapping in foil, and baking at 180°C/356°F for 50-60 minutes.
  2. Meanwhile, peel and dice the baking potatoes and boil them in salted water until fork-tender.
  3. Drain the potatoes and mash them with melted butter and cream. Stir in roasted garlic and Parmesan until creamy; season with salt and pepper.
  4. Transfer the mixture to a piping bag fitted with a large star tip and pipe swirls onto a lined baking tray.
  5. Bake at 200°C/400°F for about 15-20 minutes until golden brown.
