  • 1 large bulb of garlic
  • 1.3 kg (2.8 lbs) baking potatoes
  • 5 tbsp (75 g) butter (2 tbsp melted)
  • 2 tbsp double cream
  • 60 g (3/4 cup) freshly grated parmesan
  • 4 large egg yolks
  • Olive oil, salt & pepper (to taste)

Instructions

  1. Preheat oven to 180°C (356°F). Roast the garlic by wrapping it in foil with olive oil and baking for 50–60 minutes until caramelized.
  2. Boil peeled and diced potatoes in salted water until fork-tender (about 15 minutes). Drain and let steam dry.
  3. In a pot, mash the potatoes with roasted garlic, butter, cream, and parmesan until smooth. Season with salt and pepper, then mix in egg yolks.
  4. Pipe the mixture into swirled shapes on a lined baking tray.
  5. Drizzle melted butter over each mound and bake at 200°C (400°F) for 15–20 minutes until golden brown.
  6. Serve warm topped with parsley and additional parmesan.
