Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel (if desired) the sweet potatoes, then slice them into uniform wedges.
  3. In a large bowl, mix olive oil, minced garlic, salt, black pepper, and paprika. Add the sweet potato wedges and toss until evenly coated.
  4. Sprinkle grated Parmesan over the wedges and toss again until well-covered.
  5. Arrange the wedges on a baking sheet in a single layer and bake for 25-30 minutes or until golden brown and crispy, flipping halfway through for even cooking.
  6. Allow to cool slightly before serving; garnish with fresh parsley if desired.
