  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 2 tablespoons cornstarch
  • 1/4 cup molasses
  • 2/3 cup full-fat sour cream
  • 2 teaspoons vanilla extract
  • 3 large eggs, whisked
  • 1/3 cup unsalted butter, cut into cubes
  • 1/2 cup packed dark brown sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup heavy cream
  • 2 teaspoons powdered sugar

Instructions

  1. Preheat oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. Mix gingersnap crumbs, brown sugar, and melted butter until combined. Press into the bottom of the prepared pan.
  3. Beat softened cream cheese until smooth; gradually add sugars. Mix in spices, cornstarch, molasses, sour cream, vanilla extract, and whisked eggs until well blended.
  4. Pour filling over crust; bake in a water bath for about 60 minutes until slightly jiggly in the center.
  5. Cool slowly in the oven, then chill in the refrigerator before serving.
