  • 1 butternut squash, peeled, seeded, and cubed
  • 3 garlic cloves, chopped
  • 1 tbsp fresh sage, chopped
  • ½ tbsp rosemary, minced
  • 1 tsp fresh ginger, grated
  • 34 cups vegetable broth
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, salt, and black pepper. Sauté for 5–8 minutes until soft.
  2. Add cubed butternut squash and cook for another 8–10 minutes until lightly browned.
  3. Stir in garlic, sage, rosemary, and ginger; cook for an additional 30–60 seconds.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for about 25 minutes until the squash is tender.
  5. Allow to cool slightly before blending until smooth. Adjust consistency with more broth if desired.
  6. Season with additional salt and pepper as needed. Serve hot with garnishes like parsley and toasted pepitas.
